For an even more intense strawberry flavor, macerate the hulled and quartered strawberries with a 1/4 cup of sugar for 30 minutes before cooking. This draws out extra juice. Adjust the sugar to your liking. Taste the syrup after simmering and add more sugar if needed, a tablespoon at a time. Sterilize bottles by boiling them in water for 10 minutes before filling them with syrup. The syrup will thicken slightly as it cools. To make strawberry soda: Mix 2-3 tablespoons of syrup with 8 ounces of sparkling water. Add ice and garnish with fresh strawberries and mint, if desired.
