Follow The Directions

01

Step

In a mixing bowl, combine the cooked red beans, cooked rice, finely chopped ham, green onions, 4 tablespoons of panko bread crumbs, 2 eggs, 1/4 teaspoon of Cajun seasoning, and black pepper. Mix thoroughly until a tight, cohesive mixture forms. (5 minutes)

02

Step

Shape the mixture into small, hush puppy-sized balls, pressing firmly to ensure they hold their shape. Place the formed balls on a plate or tray, cover, and chill in the refrigerator for at least 1 hour, or preferably overnight, to allow them to firm up. (1 hour - overnight)

03

Step

Prepare the egg wash: In a small bowl, whisk together the milk and the remaining egg until well combined. In a separate shallow dish, mix the remaining bread crumbs with the remaining Cajun seasoning.

04

Step

Roll each chilled ball in all-purpose flour, ensuring it's fully coated. Then, dip the floured ball into the egg wash, allowing any excess to drip off. Finally, roll the egg-washed ball in the seasoned bread crumb mixture, pressing gently to ensure the crumbs adhere evenly. (15 minutes)

05

Step

In a deep-fryer or large, heavy-bottomed saucepan, heat vegetable oil to a temperature between 360 and 375 degrees F (182 to 190 degrees C). Use a thermometer to monitor the oil temperature. (10 minutes)

06

Step

Carefully place the breaded fritters into the hot oil, ensuring not to overcrowd the pan. Fry them until they are golden brown and crispy, about 10 minutes, turning occasionally to ensure even browning.

07

Step

Remove the fried fritters from the oil using a slotted spoon or frying skimmer, and place them on a plate lined with paper towels to drain any excess oil. Sprinkle immediately with salt while they are still hot. (5 minutes)

08

Step

Serve hot and enjoy!

For an extra layer of flavor, consider adding a pinch of garlic powder or onion powder to the bread crumb mixture.
If you don't have Cajun or Creole seasoning on hand, you can substitute with a blend of paprika, cayenne pepper, garlic powder, onion powder, and dried oregano.
Serve these fritters with your favorite dipping sauce, such as ranch dressing, remoulade sauce, or a spicy mayo.
Fritters can be prepared ahead of time and reheated in the oven for a crispier texture.
